The Why

This is our second year with Don Santos’ coffee, and a milestone for us, as we were able to purchase the entire production of his small farm. Specialty coffee buying is often depersonalized, coming down to cup scores and price points that only serve to enlarge profit margins and egos. We‘re interested in commitment without condition, choosing instead to build relationships that are based in agency and mutual trust.

Santos is one of the Semilla-associated producers that was approached buy multiple vulture coffee buyers this year. He turned each of them down, saying “we already have a client”. He’s consciously referring to espy’s customers (you), on the same longitude, 2000 miles north, drinking the coffee for the second year.

process details
Coffee cherries at peak ripeness are harvested by Santos with the help of his wife and children - a team of nine. The cherries are depulped the same day, after a float test, and then dry-fermented for 32 hours. Once washed, the coffee is dried in a solar drier on raised beds for 25 days.

The Why

Details

Subscriptions are billed on the 1st of the month, but we roast and ship on the first Tuesday. Each order is packaged in vacuum-sealed boxes and is shipped via USPS or deposited in our Ann Arbor lock-box.
