The Why

This is Marleyi Córdoba's first year of producing specialty coffee, and her first year working with Monkaaba and Semilla. As a child, her family moved to San Agustin to establish a very small farm, but the high altitude and cold climate made it incredibly difficult to cultivate coffee. After traveling for work for years, recent family tragedy left running the farm solely to Marleyi and her mother.

Even in the face of many personal and economic adversities, Marleyi is committed to investing in her farm. She is motivated by the friendships and support of the Monkaaba group, and we're so honored to play our role in roasting and sharing her beautiful coffee.

Quick tips:

This coffee is slightly more dense than some other espy coffees. Try grinding a little bit coarser if your brew times are getting too long.

process details
Cherries are collected every three weeks and are fermented for 12 hours in a wooden tank before being depulped. After a 72 hour second fermentation in clear plastic bags, they are rinsed and then drained for 12 hours in mesh bags. Afterwards, they are spread on raised beds and dried for 20-25 days.

Please note! Shipping is $8 flat-rate, but there is a free pickup option. We do have to charge $1 to initiate a subscription. This charge (plus any shipping cost) will be applied to your first bill.

The Why

Details

Subscriptions are billed on the 1st of the month, but we roast and ship on the first Tuesday. Each order is packaged in vacuum-sealed boxes and is shipped via USPS or deposited in our Ann Arbor lock-box.
